OMG – go and try this now! I may or may not have been drinking eating this by the spoonful right out of the jar – I’ll let you decide – but I’m pretty sure you know the answer! Included in my salad was avocado, tomatos, cauliflower, dulse, and cuc’s! Yum Yum!

 

Hubs and I have a party-filled weekend – which we are very excited about! Friday night we headed to my twin bro and sister in laws condo to celebrate her bday! Before I left I engaged in a photoshoot – yes I was photog and model all in one:

Bartender Brotha told me the secret to this cocktail (ready for me to expose his secret) – is freshly squeezed lime juice – first sip made my lips pucker! – it was nice and tart – I LOVED it!

I say sister-in-law but Princess Fiona and my Brotha aren’t tying the knot until July 2010 – eeeekkk SO excited for that!!!

 

Wow! I’m exhausted already and the weekend has just started! Currently I feel like a kid on Christmas because tonight in honour of Halloween, which is just really a good excuse to PARTAY, Ange, Alex , and I will be getting together at Ange’s place to party like it’s 1999 celebrate Halloween in our well-thought out costumes. Hi Sweetie Pies!

 

Hope everyone has had a FABulous couple of days! Like usual my days have been jam packed – my plan when I started this blog was to post daily – but as you can see I am struggling to do so!  Work and School have been insanely busy lately so once things calm down I am hoping to post a little more regulary :)

I must say I have had some pretty good eats this week! Last night I re-created my very Greasy Spoon resturant – for some reason I have been craving a grilled cheese like no other. When I was at the grocery store the other day – I decided to try a product I have been eyeing for a while:

This isn’t a product I buy on a regular basis but when craving’s call – girls gotta do what a girls gotta do.  There were definitely more than a few ingredients in the list that I wasn’t a big fan of – but at least there was no dairy, caesin or gluten.  I grilled up some ezikiel toast, spread with earth balance and roasted some butternut squash fries and I seriously felt like I was at a greasy spoon! It was glorious!! It’s nice to know that even when you are committed to living a healthy lifestyle you can find ways to recreate your old favourites. So I challenge everyone to try and re-create an old (maybe not so healthy) favourite of yours and make it into a healthy dish that you feel good about consuming!

Tonight’s din din was also lovely I had a big salad with topped with a veggie burger and because I have decided to try to turn every vegetable known to man into a fry, I sliced up some zucchini, tossed them in olive oil and roasted them at 400 for about 15 -20 minutes - success! Better than greasy french fries!

Hi Bloggies!!

 

How do you like my new theme??!!! As I have mentioned before I am a 27 year old woman trapped in a 5 year old princess inspired world – I heart pink so much – it brings me so much joy! Let me know what you think – I am thinking it may be a bit more difficult to read – but right now the abundance of pink is overriding any doubts I may have about the new theme – so I need your honest opinions :) In other Blog news I have finally added “My Story” under the “About Me” tab – so check it out! It was a very emotional and personal post and I struggled about posting it or not, but then after talking to my homegirl Alex I knew it was something I needed to do. If my story can inspire or help even one person this whole blogging experience will have been worth it!

An almost empty AB jar – you know what that means!!! OATS IN A JAR!!! (your eyes are not decieving you, that is actually an empty jar – my camera died on me this morning). I have actually been making quinoa oats and they are TO DIE FOR. I am staying away from gluten – due to a sensitivity and since quiona is gluten-free these are perfect. Honestly, I think I may like these better – TRY THEM you won’t be disappointed. My jar included 1/3c of oats, 1/4cup pumpkin, 1/2 nanner, stevia, crack  CINNDOGGIE (aka Cinnamon). CAUTION glass jar gets INSANELY hot when hot oats add to it – my burnt finger is begging you to believe me!

My notes for my OPTIMUM NUTRITION FOR THE MIND course. I wrote the final exam for the course this evening – I think it went o.k. This course was SO interesting – we learned about mental illness and how nutrition and vitamin and mineral supplementation cause reverse the effects. Often nutritional/vitmain/mineral deficiences/imbalances can be disguised as mental illness and when the deficiency/imbalance is corrected the symptoms disappear. Amazing isn’t it? Organic Spring mix, tomato, cauliflower, 1/2 avocado, and that big ugly blog ontop is actually a new recipe I tried out mock chicken salad - it was a very intersting combination of pecans, cashews, sunflower seeds, cucumber, celery and some spices – check it out! I made it yesterday and it actually tasted better today after sitting in the fridge overnight!

 

Well lovies it is currently 110 AM which is WAY past my bedtime – my pillow is calling my name!

What a whirlwind of a weekend!!! Right now it is currently 1245 and I am still lazing around in my p.j’s – after being so busy yesterday, today is definitely going to be one LAZY day!

 

Hubby and I had a great day yesterday – we started the day off celebrating our God-Daughters 3rd bithday.

After the bday party we were on our way to the church ceremony for our first wedding. The couple getting married were long time friends of hubby – it was a beautiful ceremony. Because we had time to go home in between the chuch and reception I was able to wear a more appropriate outfit to the church:

I am a big fan of the high waisted skirts this season – this is especially one of my fav’s because, although its hard to tell from the picture, there are actually pockets – I LOVE pockets! :)

 

We rushed home after the ceremony to “pretty” ourselves up – and off we went to the first reception. The hall was absolutely breath taking – I tried to take pictures of the decor, but unfortunetly because of the lighting in the room I wasn’t able to get a good pic. I did get a picture of the centerpieces:

The colours were beautiful oranges and burgandies with chocolate brown table and seat coverings – very elegant! The meal was delicous – I had a mushroom risotto and butternut squash ravioli – hubby said the meat was delicous as well. This was an Italian wedding – so there definitely was no shortage of food – dinner ended around 1000 pm (SO late!) and by 1030 we knew we had to get moving to our next wedding!

 

This is where things started to get a little crazy – the booze was definitely flowing. The second wedding was a good friend of mine from Univeristy – so there were a ton of my really good friends there and everyone was feeling pretty good – let me tell you! Gettin our groove on – what can I say – I don’t think we will ever be audition for So You Think You Can Dance – we definitely know we can’t!!! 

 

It was a wonderful evening and we couldn’t be happier for the two couples who got married – they are all wonderful people and deserve a life full of happiness! It was so great to just let loose and have fun with a bunch of our friends – between work and school I definitely needed to get away from it all for one night and forget about the stress - and it felt great!

 

I am definitely feeling the effects of a not-so-great diet this weekend – come Monday I will definitely be detoxing my body – lots of greens forsure! It’s amazing how much it affects my body when I eat not-so “healthy” food – I am definitely looking forward to going back to my normal eats. This has been a very busy month for us, but now things slow down a little so I will really be able to focus on nourishing my body properly!

 

Hope you enjoyed the wedding re cap! I’ll be back on track this week with the blog focusing on more health related stuff – but I thought I would give you a little glimpse of my personal life this weekend :)

Hi Lovies!

Just wanted to stop in to say hi!!! Hubby and I have another crazy weekend. We have not one but TWO weddings to go to tomorrow!! They are both very good friends of ours, so we have decided to do dinner at one and then head over to the other to P-A-R-T-Y!!! Hubby was super sweet and took me out shopping today and bought me a new dress (actually 2 new dresses!), I will post a recap after the wedding and you can let me know what you think of the dress!

I love going to weddings! I find I am much more emotional at weddings now that I have gone through it. It is so much planning and so much hard work and to see it all come together on that one day is so beautiful! Hubby and I were married on a beautiful day in Sept (16th to be exact), 2 years ago. Its so hard to believe that it has been 2 years already!!! It was such a beautiful day and definitely something I will remember and cherish forever! I thought since this is a weekend full of weddings for us, I would share some pics from our special day … So enjoy!

Hi my friends!

What a crazy weekend – Friday night hubby and I were out at his annual baseball banquet – I will spare you the crazy details, but lets just say hubby was feeling a little under the weather the next morning! It was quite the wild party – and guess what I was – the DD!!! I must say, it was a lot of fun watching everyone make fools of themselves – and the best part about it was I woke up Saturday feeling fantastic!!! Saturday was spent studying all day – I have a final exam tomorrow for my Fundamentals of Nutrition class – although the material is not super complicated – there is just SO much of it – it’s hard to know where to focus your studying because there is so much! Anyways – everyone say a quick prayer for me Wednesday night around 8pm as that is when I’ll be writing it! I spent Sunday studying more (blah so boring!) and also preparing some food for the week ahead. I made another batch of my raw bread and another batch of kale chips. I was so excited when I saw hubby scraping the end of the bag trying to get every last kale chip out – that meant HE LIKED THEM! I had a few requests for my recipe for my raw bread so here it is:

4 cups vegetables (I used carrots, cauliflower, red cabbage and zuchhini in mine – but you can use whatever combination you like)

1 cup ground flaxseed

2 tbsp lemon juice

2tbsp nama shoyu

2tbsp nutritional yeast

2tbsp fresh herbs (I used basil, thyme and cinnamon – use whatever you like – I also didn’t use fresh)

1/2 tsp pepper

1/4 tsp salt

1/4 cup filtered water (if needed – I need it)

Blend everything in food processor (adding water as necessary). Dehydrate at 110 for 15-18 hrs (flip halfway through).

I decided to make them square this time to make it feel more like “real” bread. The recipe that I based these off of actually call them pizza crusts – so you could eat them that way as well! I find that a lot of raw recipes can be very nut and oil heavy so I really like this one because it is basically all veggies! If you give it a try, let me know what you think!

Last nights dinner consisted of a very special star who has been missing in action for some time now. Enter the Kabocha sqaush:

OMG – I decided to roast it this time – as I have seen this to be most popular in the blog world – and it was TO DIE FOR! So creamy! I roasted the whole thing and honestly it is not going to be around for long! Normally I cut it up and steam it, which is still very good, but I think roasting it is the way to go!

To accompany the squash I threw together a big salad – with everything I could find in the fridge!

Avocado, tomato, cauliflower, sunflower seeds, pumpkin seeds, sunflower sprouts and a new addition to most of my salads dulse! (which is a great source of minerals especially iodine)

All in all it was a lovely dinner!

One more piece of exciting news before I leave. Since I have one of the most loving, supportive husbands ever, he came home with a surprise for me the other day, which I thought I would share with you all! I have been talking a lot about sprouts, I plan to do a post on all of the great benefits of them, and was mentioning to him that the next thing on my wish list would be to get a sprouter of my own so I could make them at home! Well being the wonderful guy that he is, this is what he showed up with after work one day:

Apparently this is not just any sprouter – this is the KING of sprouters! I can’t wait to try it out – I will give you a review of what I think, apparently it is does all the work for you (waters them and everything!). As soon as I find time to get it going I will report back!

Hi Sweet Bloggies!!

I’m alive!! So sorry I haven’t posted in couple of days, between work, school, appts and trying to be a “good wife” something had to give (sorry blog I promise to give you lots of love!!). Life has been pretty hectic to say the least and there really are no signs of it slowing down anytime soon – that’s how I like it though :)

As I have mentioned in previous posts I do enjoy a fairly high raw diet – I am not super strict about staying at a certain percentage of raw foods – instead I try to listen to my body. Normally I eat mostly raw during the day and then will have some cooked food in the evenings. This can get challenging in the winter as when the cold weather hits I am normally looking for something a little more comforting and warm. So over the winter it is very likely that you will see a little more cooked foods in my diet.

I’m sure many of you are asking yourselves – why raw? What is so good about raw foods? Raw foods contain an important property that no other food contains, and that is live enzymes. Enzymes are very important to our bodies – and are catalysts (they speed up specific chemical reactions in our body)  for every human function. We are all born with the ability to produce enzymes and are actually born with a great deal of enzymes stored up. As we subject ourselves to the “standard american diet” these enzymes get used up trying to digest our food as well as trying to keep up with with the many other functions they are needed for. Over time our bodies are not able to keep up with producing the number of enzymes that are required for all of our human functions and therefore many of us have very depleted stores of enzymes. The interesting thing is that what many people percieve  as a slow metabolism is actually us being  low on our “workers” or enzymes. When you eat uncooked plant food, you are taking in large amounts of live enzymes. The more enzymes you take in the, the more you store, the more you have for fueling your body. I can atest to the fact that eating live food truly makes you feel more alive and vibrant!

Having said all that, I think it is important for every person to put this information in perspective of their own lives. Eating a high raw diet is definitely not for everyone, and I would not recommend someone just jumping head first into this type of lifestyle. Your body needs time to adjust to this type of diet and jumping in too quickly can sometimes have more negative affects than positive. What I would recommend for people just starting out is to try and add some type of raw vegetable or raw salad to a couple of meals a day. If you own a juicer or have juice bar nearby try incorporating a fresh juice a couple of days a week and see how you feel. Eating raw foods does not have to be an all or nothing lifestyle – simply try incorporating a few more  fresh raw fruits and vegetables into you diet and see how you feel!

An important aspect of keeping up with a raw foods lifestyle is to make sure you have things prepared and on hand so you aren’t scrambling to figure out what to eat. I spent a day this week filling my dehydrator with lots of goodies so that I would be fully stalked for the week. Here’s what I made:

My first batch ever of Kale Chips – OMG – these are AHHHmazing. I had to separate them into individual baggies so I wouldn’t devour the whole batch in one sitting.

At the same time these were dehydrating I made a batch of my absolute favourite type of raw bread – I didn’t get the greatest picture, but they are so pretty looking in “real life” :)

These actually look like little round pizza crusts – in them there is cauliflower, zucchini, carrots and red cabbage which gives them a very pretty look – the binding agent is flax seeds. I actually prefer these to real bread – it is very hard for me to keep these around!!!

Lastly, of course I made a batch of my delightful macaroons – and this time they were even more delightful :017

I added a few strawberries to the batter and now they are the loveliest shade of pink :)

I want to end this post by reminding you that I am by no means 100% raw – there are days in fact when I eat 100% cooked foods. I would say that I go anywhere between 50-95% raw on the average day. It’s all about a balance – I just wanted to highlight the importance of incorporating some raw foods into your diet because of the health benefits you will receive in doing so. Everyone is at a different stage on their journey to health, if you are normally someone who would order a side of fries when you are out in a restaurant – next time order a side salad instead. If you are someone who reaches for some crackers or pretzels for a snack – cut up some raw veggies and snack on those instead. Little changes will all add up to a more well balanced, healthy lifestyle. I know that the raw lifestyle is definitely not for everyone – but raw fruits and veggies are – so eat up!!

I am currently enjoying a very relaxing Thanksgiving Monday – it feels great not to have to worry about work today – I could get use to this ;)

As promised, I will recap my Thanksgiving festivities. Hubby and I packed everything up around 4pm to head over to my parents house. I was running around all day preparing the vegan dish I mentioned in my last post. I must admit I was quite nervous to serve this to my non-vegan family – I thought they might look at me like I had two heads – but my dish was VERY WELL recieved. I was absolutely shocked – I really expected to have a ton of leftovers – but people actually went up for seconds!! I was so happy to have my family enjoy something that I prepared – and so happy that they were so open to trying something new. I know when people hear that something is vegan a lot of the time they assume it is tasteless or “weird” so I was happy to debunk this myth and show my family that eating vegan can be absolutely delightful! :)

So I will cut to the chase the meal that I decided to prepare was a carrot-cashew loaf.  This recipe comes from one of my favourite cookbooks called Enlightened Eating, which is actually written by a Holistic Nutritionist, Caroline Dupont, who lives in my area. I have met with her quite a few times and she is such an amazing, inspiring woman. I have tried numerous cookbooks but I also find myself going back to hers because her recipes are so wonderful! Obviously, the main ingredients to this recipe were carrots and cashews but the spices are what bring this dish to life – sage, thyme and basil, there is onion, celery, a bit of olive oil and flour in there – and that’s it! A very simple but very satisfying dish!

Here’s my plate – I also made a nice tamari gravy to go over the carrot – cashew loaf – it turned out yum yum!

The rest of the fam enjoyed a sample of my meal and turkey and all the trimmings! Of course we all left room for dessert – there was homemade apple pie with ice cream and homemade coconut cream pie – courtesy of my Nanny – who bakes like no other :) I made some raw truffles (dates, walnuts, coconut and raw cacao powder) as well as a few macaroons I had left over from my last batch – the macaroons went over extremely well – I wish I had more – they were definitely a crowd pleaser!

The raw truffles were rolled in coconut – I think next time I would add a little bit more cacoa – they didn’t have enough of a chocolatey taste for me!

My first vegan Thanksgiving was definitely successful! It was wonderful to spend time with my family – it’s so hard to get everyone together – and it was great to just be together and enjoy each others company! I may or may not have had a few to many a couple glasses of wine – causing me to feel a tad sluggish today :)

I’ll leave you with one new fact you may or may not have known about me – I am a twin! I have a wonderful twin brother who is one of my biggest supporters and always there for me no matter what! It’s hard to explain what it’s like to be a twin – it is definitely a special bond that only twins can understand :) It’s always been Craig & Krissy and I can’t imagine my life without him :)   I feel very lucky to be able to have such a special person in my life!

Hi Party Peeps! Guess what! It’s a long weekend for us Canadian folk! We are celebrating Thanksgiving - 3 day weekend – I lovessss it!!!  I am going to make this post a quick one – but I promise to be back tomorrow with something special. I have some raw and vegan recipes I am planning for tomorrow’s feast – while my family will be enjoying turkey and all the trimmings – I will force them to at least take a bite of the treats I am preparing :) I’ll let you know their reaction :)

Last night I made a scrumptious meal for myself:

My smoothie of choice lately has been this princess – and for all that know me, you will understand why it’s my favourite:

It’s PINK!!! The joy I feel while drinking this cannot be explained – it can only be felt – and OHHH does it feel good. In this masterpiece you will find – protein powder, almond milk, stevia, and the star of the show – frozen strawberries – DELIGHTFUL! The only downfall is that I don’t get my greens in – but somedays I just have to let loose and live on the wild side – you know what I’m sayin??!!

So – here’s the deal – I am a bit of a competitive person – and this afternoon I was feeling like I needed a bit of a challenge – a competition of sorts. As you’ve seen this week – I am quite talented at eating my body weight in HughJass Salads – so I got to thinking – Krissy, why stop at your body weight – why not show the world what you are capable of  – go for the glory and slam down your hubby’s weight in HughJass. I’m not sure this photo does this salad justice. This beast didn’t stand a chance against me – you better believe every morsel of that monstrosity went in ma belly!  Mission Accomplished! My husband should feel so proud – I can only imagine what it must be like to have a wife who can demolish your body weight in leafy green goodness! :)

On that note, it’s time for me to start preparing for tomorrow festivities! To all my fellow Canadian Homeboys and Homegirls – Have a happy, healthy, wonderful Thanksgiving!! and to all my wonderful U.S. readers – why don’t you pretend you are Canadian this weekend – then you can join me in a 3 day weekend! (as long as you let me be American during your thanksgiving :) )
